Super tacos

What makes a super taco super? As far as we can make out, from the three or four we ate during our visit, it normally has to do with the toppings - guacamole, cheese, and so on. But the super taco that inspired this feature went a bit further in claiming its ‘super’ status.

Firstly, the meat was carné asada – a thinly sliced grilled beef. It was achingly tender and gave the impression of having been marinated for the best part of a year. Secondly, there were two tortillas – one soft, and one crisp. Binding the two together was a layer of melted cheese. Thirdly, the super extras were insane. Fresh, tangy guacamole; thick, rich sour cream; and chopped coriander to keep things fresh.

As you can probably tell, this taco left its mark on us. The recipe outlined below is really just our best stab at the genuine article, so if you have any suggestions, please feel free to comment and let us know.

The taco

4 crispy taco shells
4 soft corn tortillas
Sour cream
Cheddar cheese, finely grated

  1. Sprinkle the cheese over each of the soft tortillas evenly
  2. Place them under a grill until the cheese is melted and bubbling
  3. Fold the cheesey tortillas around the taco shells, to form a soft outer layer.
  4. Spread a generous dollop of sour cream over the inside of the taco

The meat

900g skirt steak
4 cloves garlic, diced
1 jalapeño chilli, seeded and diced
1 ½ teaspoon cumin powder
1 big bunch of coriander, finely chopped
2 limes, juiced
2 tbsp white wine vinegar
½ tsp sugar
salt and ground black pepper
100ml olive oil

  1. First, take your steak and give it a thorough tenderising with a big blunt object
  2. Now slice it into super thin strips and place in a large bowl
  3. Add the remaining ingredients to the bowl and mix everything together thoroughly
  4. Cover and leave in a refrigerator for at least 4 hours

The guacamole

3 ripe avocados
Juice of 1 lime
1 small onion, diced
2 tomatoes, diced and seeded
4 mild red chillis, diced and seeded
salt and ground black pepper
A handful of coriander, chopped

  1. Mix all the ingredients together

The salsa

250g tomatoes, roughly chopped and seeded
1 small onion, diced
3 mild chillis, diced and seeded
A handful of coriander, roughly chopped
Juice of 1 lime

  1. Mix all the ingredients together

Finally…

Once you have completed the various components, it’s time to combine. Fill the taco shell with meat, then salsa, then guacamole. Finally, top it off with any remaining coriander you have to hand and a good squeeze of lime. Enjoy with an ice cold lager, and probably a long sit down afterwards.

Well we just had a version of this for dinner and it was INCRED. Talk about super, SUPER DUPER.
