Sprout and squeak



(Serves 4)

25g butter
1 onion, finely chopped
400g cold roast potatoes, mashed
200g cold cooked Brussels sprouts, shredded
75g cold cooked carrot, mashed or chopped
1 tbsp plain flour

  1. Take a large frying pan and melt the butter
  2. Add the onion and cook until soft slightly brown
  3. Tip the onions into a large mixing bowl
  4. Add the sprouts, potato and flour, and season well
  5. Mix thoroughly and roll into as many patties as you like
  6. Give the pan a good wipe with a piece of kitchen roll
  7. Add a touch of oil and bring up to a medium heat
  8. Now place the patties in the pan and fry for about 10-15 minutes, until they are brown and crisp on both sides
  9. Serve with eggs, or whatever cold meat and pickle you have kicking about on Boxing day

Jonny’s tasty tip
Chop a little chorizo and fry it with the onions. Then add to the mix, along with a teaspoon of cumin and one of cayenne pepper, for a spicy Mediterranean twist.
