Spicy chicken noodle soup


Mouth tinglingly spicy comfort soup

(Serves 4)

Cold roast chicken, torn into small pieces
1 tbsp ginger, finely chopped
1 tbsp soy sauce
1 tbsp fish sauce
½ tsp sugar
1 tsp dried chilli
1.5 litres chicken stock
3 spring onions
125g fine noodles
½ small white cabbage, chopped into strips
Some fresh coriander to sprinkle
Juice of one lime

  1. Pour stock in a large pan and bring to a gentle simmer
  2. Add the ginger, chilli, sauces, sugar, and chicken, and return to simmer
  3. Cook for 2 minutes
  4. Add the noodles, cabbage and onions (at this point, feel free to chuck in any other vegetables you fancy - it’s your soup after all)
  5. Bring to the boil and cook for a further 3 minutes. Poke the noodles to stop them from sticking
  6. Serve your soup straight away, not forgetting to add the lime juice, and scatter with torn coriander
