Rum and ginger lolly

People will tell you that you can’t freeze alcohol. But you know what Thrifty Gobbler thinks of people…

The mix
4 parts ginger ale
2 parts spiced rum
1 part lime juice
2 tsp of sugar per lolly
About 1 sprig of mint per lolly

To make it lolly
Enough lolly moulds to go around
An equal number of lolly sticks/spoons/fingers

  1. Tear up the mint
  2. Mix all the ingredients together thoroughly
  3. Fill the lolly moulds/yoghurt pots with the mixture
  4. Place in the freezer
  5. After about an hour, check to see how they’re getting on. If the mixture has begun to freeze, poke your lolly sticks into the pots and place back in the freezer
  6. Once fully frozen, take out and serve
