Minestrone



(Serves 4)

3 big carrots, roughly chopped
2 celery sticks, roughly chopped
1 large onion, roughly chopped
2 garlic cloves, crushed
2 large potatoes, diced
2 tbsp tomato purée
1 tbsp olive oil
2L vegetable stock
400g can chopped tomatoes
400g can cannellini or haricot beans
140g spaghetti, broken into short pieces
1⁄2 head savoy cabbage, finely shredded

  1. Put the carrots, onion and celery into a food processor and give them few blasts, to form small pieces. Add the processed vegetables, garlic and potatoes to the oil in a heavy pan, and cook over a high heat for 5 minutes until softened
  2. Add the tomato purée, vegetable stock and tomatoes. Bring the mixture to the boil, turn the heat down to a gentle simmer, and leave covered, for 10 minutes
  3. Finally add the beans and spaghetti shards, and cook for another 10 minutes, adding the cabbage for the final 2. Season to taste and serve with your favorite bread
