Minestrone
(Serves 4)
3 big carrots, roughly chopped
2 celery sticks, roughly chopped
1 large onion, roughly chopped
2 garlic cloves, crushed
2 large potatoes, diced
2 tbsp tomato purée
1 tbsp olive oil
2L vegetable stock
400g can chopped tomatoes
400g can cannellini or haricot beans
140g spaghetti, broken into short pieces
1⁄2 head savoy cabbage, finely shredded
- Put the carrots, onion and celery into a food processor and give them few blasts, to form small pieces. Add the processed vegetables, garlic and potatoes to the oil in a heavy pan, and cook over a high heat for 5 minutes until softened
- Add the tomato purée, vegetable stock and tomatoes. Bring the mixture to the boil, turn the heat down to a gentle simmer, and leave covered, for 10 minutes
- Finally add the beans and spaghetti shards, and cook for another 10 minutes, adding the cabbage for the final 2. Season to taste and serve with your favorite bread
