Kale pasta



Serves 2

150g kale
1/2 onion, diced
1 clove garlic
1 cup parmesan
1 lemon
2 rashers bacon
1 pork sausage

  1. Sautee the onion in a large pan until soft, then add the garlic
  2. Chop the bacon into small pieces, remove the meat from the sausage skin and break into pieces
  3. Add the meat to the onions, and cook until brown
  4. Now add the kale, drizzle with a good slug of olive oil and stir thoroughly
  5. Pour 1/2 cup of water into the pan, cover and leave to simmer on a low heat for 20 minutes
  6. Meanwhile, cook some spaghetti until al dente
  7. When the kale is finished, stir in the parmesan, salt, pepper, and the juice from the lemon
  8. Finally, combine with the spaghetti and serve with a sprinkle of parmesan
