Kale pasta
Serves 2
150g kale
1/2 onion, diced
1 clove garlic
1 cup parmesan
1 lemon
2 rashers bacon
1 pork sausage
- Sautee the onion in a large pan until soft, then add the garlic
- Chop the bacon into small pieces, remove the meat from the sausage skin and break into pieces
- Add the meat to the onions, and cook until brown
- Now add the kale, drizzle with a good slug of olive oil and stir thoroughly
- Pour 1/2 cup of water into the pan, cover and leave to simmer on a low heat for 20 minutes
- Meanwhile, cook some spaghetti until al dente
- When the kale is finished, stir in the parmesan, salt, pepper, and the juice from the lemon
- Finally, combine with the spaghetti and serve with a sprinkle of parmesan
