Dirty rice



(Serves 2)

250g (9oz) rice
1 red pepper
1 green pepper
500ml chicken stock
150g (5oz) chorizo
150g (5oz) bacon, or lardons
1 medium onion
1 clove garlic
1 tsp cayenne pepper
1 tsp cumin

  1. Chop the meat into small pieces, then put a little oil in a small pan and cook the chorizo and bacon bits until they begin to go crispy. Tip the meat out of the pan and onto a bit of folded kitchen roll
  2. Finely chop your onions, peppers and garlic and chuck them in the pan with all the meat fat and oil, sweat them for a five minutes until they start to go soft
  3. Next, add the spices and cook for another minute before adding the rice and pork bits and cooking for a minute more
  4. Now pour in the stock and leave to simmer gently with the lid on for ten minutes, or until the liquid has disappeared
  5. When it’s finished, take the pan off the heat and leave, with the lid still on, for another minute or two before serving
