Dirty rice
(Serves 2)
250g (9oz) rice
1 red pepper
1 green pepper
500ml chicken stock
150g (5oz) chorizo
150g (5oz) bacon, or lardons
1 medium onion
1 clove garlic
1 tsp cayenne pepper
1 tsp cumin
- Chop the meat into small pieces, then put a little oil in a small pan and cook the chorizo and bacon bits until they begin to go crispy. Tip the meat out of the pan and onto a bit of folded kitchen roll
- Finely chop your onions, peppers and garlic and chuck them in the pan with all the meat fat and oil, sweat them for a five minutes until they start to go soft
- Next, add the spices and cook for another minute before adding the rice and pork bits and cooking for a minute more
- Now pour in the stock and leave to simmer gently with the lid on for ten minutes, or until the liquid has disappeared
- When it’s finished, take the pan off the heat and leave, with the lid still on, for another minute or two before serving
