Basic tomato and basil sauce

(serves 4)

4 tbsp olive oil
1 onion, chopped
2 garlic cloves, crushed
400g tin chopped tomatoes
250ml passata
1 tbsp balsamic vinegar
30g (1oz) fresh basil leaves, torn
Salt and black pepper

  1. Heat the olive oil and fry the onion and garlic until soft
  2. Add chopped tomatoes, passata and balsamic vinegar
  3. Boil quickly, stirring continuously, until sauce thickens
  4. Before serving, stir in basil and season well

Great combination, basil and toms. Tomato seeds can have a bitter taste, so make sure you use the sieved sort. Same when using fresh. Great over pasta with some grated Parmesan, be generous with the garlic.
