Basic tomato and basil sauce
1(serves 4)
4 tbsp olive oil
1 onion, chopped
2 garlic cloves, crushed
400g tin chopped tomatoes
250ml passata
1 tbsp balsamic vinegar
30g (1oz) fresh basil leaves, torn
Salt and black pepper
- Heat the olive oil and fry the onion and garlic until soft
- Add chopped tomatoes, passata and balsamic vinegar
- Boil quickly, stirring continuously, until sauce thickens
- Before serving, stir in basil and season well

Great combination, basil and toms. Tomato seeds can have a bitter taste, so make sure you use the sieved sort. Same when using fresh. Great over pasta with some grated Parmesan, be generous with the garlic.
